Asparagus with Tarragon Vinaigrette
Ingredients:
- 1 lb asparagus
- 2 tablespoons olive oil
- 1 tablespoon white wine vinegar
- 1 tablespoon chopped fresh tarragon
- 1 teaspoon Dijon mustard
- 1 garlic clove, minced
- Salt and pepper
Instructions:
- Preheat the oven to 400°F
- Trim the ends of the asparagus and arrange them on a baking sheet
- Drizzle the asparagus with olive oil and season with salt and pepper
- Roast in the oven for 10-12 minutes, or until the asparagus is tender and lightly browned
- While the asparagus is roasting, prepare the tarragon vinaigrette
- In a small bowl, whisk together the white wine vinegar, chopped fresh tarragon, Dijon mustard, minced garlic, salt, and pepper
- Drizzle the tarragon vinaigrette over the roasted asparagus
- Serve the asparagus with tarragon vinaigrette warm or at room temperature and enjoy!
