Lettuce Risotto
Ingredients:
- 1 lettuce
- 1 bunch of spring onions
- 80 g butter
- 225 g risotto rice
- 50 g cheese
- 1 L stock
- 50ml dry white wine
- Lemon zest
- Salt
- Pepper
Instructions:
- Boil the stock in a pan
- Melt the butter in another pan
- Chop the white part of the spring onions and cook in the melted butter gently
- Add the rice to the pan and stir
- Add white wine and simmer
- Add in a large amount of hot stock
- Put in chopped lettuce
- Stir until the rice is creamy
- Stir in lemon zest and cheese
- Season with salt and pepper
- Serve and enjoy
