Red caesar salad

When you want to be fancy, but not really. An easy 2 step salad recipe that draws a crowd.

Ingredients:

For the dressing:

  • ½ cup fresh lemon juice
  • 1-2 anchovy filets
  • 2 tablespoons worcestershire sauce
  • 1 pasteurized large egg yolk
  • ½ cup canola oil
  • 1 garlic clove minced
  • 1 ½ teaspoon lemon zest
  • ½ teaspoon dijon mustard
  • ½ teaspoon honey
  • Dash of hot sauce
  • ½ teaspoon vinegar
  • ½ cup freshly grated parmesan cheese

For the salad:

  • 4-5 heads red romaine lettuce
  • ½ cup freshly grated parmesan
  • Croutons
  • Lemon juice

Instructions:

  1. Blend all dressing ingredients except cheese. Add cold water if too thick.
  2. Fold in parmesan cheese.
  3. Slice romaine into spears lengthwise.
  4. Place lettuce in a bowl and drizzle with dressing. Toss.
  5. Transfer to a large bowl and add croutons, crumbling slightly as you add them.
  6. Sprinkle fresh lemon juice.
